The pandemic has turned our lives upside down and how. Food delivery has been our saviour through these times. With restrictions on eating out and our favourite restaurants shutting down, the F&B industry has taken quite a hit—it hurts bad. While most have been disheartened some have taken up the cause of catering to our needs. Enter, Cloud Kitchens. For those who haven’t been introduced to this phenomenal business innovation—Cloud Kitchens are what we would call the high street version of a couture brand! They aren’t full-fledged restaurants, but low-cost kitchens that are rented to cook in and deliver to all the hungry stomachs around the city. It’s cost-effective as you don’t have to worry about eating with extra fancy ceramic cutlery or pay for the ambience.

A pandemic food baby from Mumbai, A Hot Tin Roof is your go-to for all things sandwiches. A food-truck-turned-cloud-kitchen, this place is a haven for those who want to taste sandwiches from around the world. Started by Mrinmai Parab and Lance Lewis, A Hot Tin Roof serves scrumptious vegetarian options from Falafel Wrap with chickpea falafel and veggies to American Grilled Cheese and a few more. The non-vegetarians are not left behind either, they have Doner Kebabs from Turkey, a Chicken Katsu sandwich from Japan, even the Italian Meat Ball Sub and the Shrimp Po’Boy. While asking about the shift from the food truck to the cloud kitchen set-up, co-founder Mrinmai Parab said, “Sadly Mumbai doesn’t have a proper place to park the food truck. We had to adapt. Plus, Cloud Kitchens give you bigger space, and leave scope for a bigger menu. Food is our love and we want everyone to have it too!”
